  • 475 ml (2 cups) vegetable stock
  • 30g (2 tbsp) tomato paste

  • 30g (2 tbsp) onion powder
  • 30g (2 tbsp) garlic powder
  • 10g (2 tbsp) oregano
  • Salt and black pepper to taste

Instructions

  1. Put all the ingredients into your Vitamix blender and secure the lid properly.
  2. Start blending at the lowest speed, and gradually increase until you reach the highest speed.
  3. Blend for a couple of minutes. You’ll know that the soup is ready when the container starts to feel warm and steam starts escaping from the lid.
  4. Serve immediately. This is a raw tomato soup, and it won’t taste as good if you save it for later or refrigerate it overnight.

  • 260g (3 medium-sized) julienned onions

  • 950ml (4cups) beef or vegetable stock
  • 30ml (2 tbsp) extra virgin olive oil

  • 120ml (½ ounce) dry Sherry wine

  • 1 dried bay leaf 

Instructions

  1. Add the oil, onions, and the bay leaf in a large pan over medium heat.

  4. Add 80ml of the Sherry wine to deglaze and let the mixture reduce.
