Air Fryer Pork Tenderloin and Red Potatoes with Creamy Roasted Garlic Sauce
Ingredients
- 1-1¼ pounds of trimmed pork tenderloin
- 2 pounds of red potatoes, cut into bite-sized chunks
- 2 tablespoons of extra virgin olive oil, divided
- 2 teaspoons of dried rosemary, divided
- 1 teaspoon garlic powder, divided
- 1 teaspoon onion powder, divided
- Salt and black pepper to taste
- If preferred, garnish with fresh thyme and rosemary leaves.
Instructions
1. 30 minutes before cooking, take the pork tenderloin out of the fridge. If necessary, trim the tenderloin of any extra fat and the thin membrane that covers it. Set both aside.
2. Activate the "Air Crisp" function on the air fryer and turn it on. Set the timer for 25 minutes and the temperature to 375°F. To begin heating the device, press "Start."
3. In a small bowl, add the dried rosemary, garlic powder, onion powder, and half the olive oil while the appliance is preheating. Stir to blend after adding salt and black pepper to taste.
4. The pork tenderloin should be covered with the seasoned olive oil mixture and set aside.
5. Add the remaining olive oil, dried rosemary, garlic powder, and onion powder to the big bowl of diced potatoes. Toss the ingredients together after adding salt and black pepper to taste.
6. Place the seasoned tenderloin inside the air fryer's basket as soon as it beeps and displays "Add Food." Be careful since the basket will be quite hot. If required, place at an angle as described.
7. Scatter the potatoes over the meat then place the basket back into the appliance. To begin cooking, close the lid.
Advice: Assuming you've already roasted the garlic, make the roasted garlic cream sauce using the detailed instructions indicated in this blog post while the pork is cooking. While the pork tenderloin is resting, make the sauce if you're roasting the garlic along with it.
8. Lift the lid after 10 minutes, carefully flip the tenderloin, and mix the potatoes to ensure equal browning. Before monitoring the internal temperature of the pork with an instant-read meat thermometer, close the cover and continue air frying for an additional 10 minutes.
Note: Pork tenderloin should be cooked to a safe internal temperature of 145°F. As the temperature will continue to climb by several degrees while the pork rests, remove it from the air fryer when it is just above 140°F.
Before removing the tenderloin, give the air fryer a few more minutes to get less pink results. Before serving, let the pork rest for three to five minutes.
9. Shake the basket and continue air frying the potatoes for the remaining 5 minutes after the tenderloin has been taken out.
10. With the roasted potatoes on the side and a sprinkle of the Roasted Garlic Cream Sauce on top, slice the pork tenderloin and serve it right away. If preferred, garnish with fresh thyme or chopped rosemary leaves. Enjoy!

Kitchen Tip: It is more effective to roast the garlic in advance and create the sauce while the tenderloin is in the air fryer. But you can alternatively roast the garlic separately and make the sauce while the pork is resting. The head of garlic should only be chopped off, brushed with olive oil, and wrapped in aluminum foil before being added to the air fryer basket with the potatoes and pork.
Note: The amount of time required to prepare this dish will vary depending on several variables, including the tenderloin's internal beginning temperature, the size of the potato pieces, and the brand and model of the air fryer being used. To make this dish, the pork was taken out of the fridge 30 minutes before cooking, and the potatoes were divided into equal pieces as illustrated.
Roasted Garlic Cream Sauce
Ingredients
- 1 large head of roasted garlic
- 1½ cup whole milk, divided
- 1 large head of roasted garlic
- ¼ cup all-purpose flour
- 4 ounces of chunked cream cheese
- ¼ teaspoon salt
- ¾ cup freshly grated Parmesan cheese
Instructions
1. Warm roasted garlic cloves should be squeezed out of their skins and placed in a medium basin. One cup of whole milk should be added after mashing the garlic with a fork to create tiny bits.
Tip: Blend milk and garlic for a few seconds to get smoother results.
2. Butter should be added to a pan that is on low heat. For about two to three minutes, or just until there are no lumps left, gradually whisk the flour into the melted butter. Don't let the mixture darken or become brown.
3. The milk and cream cheese mixture should be added to the skillet. Cook for two to three minutes while stirring often to ensure that the cheese melts thoroughly.
4. Salt and Parmesan cheese should be added. Till the cheese is well mixed into the sauce, keep stirring.
5. Add the remaining milk, a little at a time, as the sauce thickens, until the desired consistency is obtained. When ready to serve, remove from heat and keep warm. Enjoy!
