  • 4 salmon, steak cut (120g each)
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 2 tbsp grapeseed oil
  • 1/8 cup dijon mustard
  • 60g panko breadcrumbs
  • 20g parsley, finely chopped
  • 3 tbsp parmesan cheese
  • 1 tsp dried oregano
  • 1/4 tsp dried thyme
  • 1/2 tsp garlic powder
  • 1/2 tsp dried sage
  • 2 tbsp peanuts, ground
  • 1/4 tsp lemon zest, chopped

Instructions

  1. Preheat oven to 375 degrees Fahrenheit. 
  2. Brush the baking sheet with grapeseed oil.

  3. Combine breadcrumbs, parsley, cheese, dried oregano, thyme, garlic powder, lemon zest, and ground peanuts in a medium-sized bowl or tray; Set aside.
